Raw Vegan Strawberry Mint Cake

Ingredients:

For the crust: 

  • Dehydrated bananas 

For the filling: 

  • 800 g/ 28 oz strawberries 
  • 400 g/ 14 oz dried apples 
  • A couple of mint leaves

For the topping: 

  • 100 g/ 3.5 oz coconut flour 
  • 2 cups of purified water

Order raw coconut flour:

For the decoration: 

  • Strawberry slices 

*All the ingredient quantities should be modified according to the cake mould size.   

Equipment:

  • A knife and cutting board
  • Dehydrator
  • Blender
  • Parchment paper
  • A cake mould
  • A fridge

Preparation: 

  • Peel the bananas; 
  • Finely slice the bananas lengthwise; 
  • Dehydrate the banana slices at 48 Celzijus, that is 118 Fahrenheit, degrees for about 8 hours;
  • Place the parchment paper on the bottom of the cake mould; 
  • Place the dehydrated banana slices on the bottom of the cake mould, so that they intersect length and width wise alternately. 
  • Place the strawberries, dried apples and mint leaves into the blender; 
  • Blend these ingredients into the filling; 

  • Add the filling to the cake mould;
  • Soak the coconut flour in water; 

  • Add the soaked coconut flour on the top of the filling;
  • Decorate the cake with some strawberry slices;
  • Leave the cake into the fridge to tighten;
  • Tananana – the cake is done and very tasty!
