Raw Vegan Cake "Summer Delight"

Ingredients:  

Ingredients for the crust:

  • 18oz/ 500 g pitted dates
  • 5 oz/ 150 g raw carob powder

 Ingredients for the filling:

  • 18oz/ 500 g apricots 

 Ingredients for the topping:

  • 7 oz/ 200 g blackberries
  • 0.7 oz/ 20 g chia seeds 
  • 1/2 cup of purified water

Order chia seeds:

Equipment:

  • A tray and a sunny window or a balcony or a dehydrator
  • A food processor
  • A cake mold
  • A piece of parchment paper
  • A pair of scissors
  • A blender
  • A spatula
  • A freezer

Preparation:  

  • Remove the kernels from the apricots; 
  • Open the apricots into halves; 
  • Spread the apricot halves, with the inner parts facing up, onto a tray; 
  • Sun dry the apricots for a couple of hours; 
  • Alternatively, you can dehydrate them in the dehydrator;
     
  • Soak the chia seeds in purified water for about half an hour;
     
  • Remove the pits from the dates; 
  • Place the dates and carob powder into the food processor;
  • Pulse these ingredients into a paste;
     
  • Place a piece of parchment paper onto the bottom of the cake mold;
  • Place the date-carob paste into the cake mold; 
  • Spread the paste over the bottom of the cake mold, creating the cake crust;
     
  • Place the dried apricots into the blender;  
  • Blend the dried apricots into a filling;
  • Place the apricot filling into the cake mold and spread it evenly over the crust;
     
  • Place the cake mold into the freezer; 
  • Place the blackberries and soaked chia seeds into the blender;
  • Blend these ingredients into the topping;
  • Take the cake out of the freezer;
  • Add the topping onto the cake;

  • Decorate the cake as you wish;

  • Place the cake into the freezer to tighten;
