Raw Vegan Banana-Raspberry Cake

Ingredients:

Ingredients for the crust: 

  • 450 g/ 16 oz dates  
  • 150 g/ 5 oz raw carob powder

Ingredients for the filling: 

  • 300 g/ 10.5 oz fresh bananas 
  • 600 g/ 21 oz dried bananas - dehydrate the banana slices for about 8 hours at 46C/ 115 F degrees 
  • 1 Tbsp of raw carob powder 

Ingredients for the decoration: 

  • Raspberries  

Equipment:

  • A dehydrator
  • A food processor
  • A cake mold
  • A piece of parchment paper
  • A pair of scissors
  • A blender
  • A spatula
  • A freezer

Preparation: 

  • Remove the pits from the dates; 
  • Place the dates and carob powder into the food processor; 
  • Pulse these ingredients into a paste; 
     
  • Place a piece of parchment paper in the cake mold; 
  • Place date-carob paste in the cake mold; 
  • Spread the paste over the whole surface of the bottom of the cake mold, creating the cake crust; 
     
  • Place the fresh and dried bananas and the raw carob powder into the blender; 
  • Blend these ingredients into a filling; 
  • Place the filling into the cake mold; 
     
  • Place the cake into freezer to tighten; 
  • Take the cake out of the freezer; 
     
  • Move the cake from the cake mold onto a tray; 
  • Add the raspberries onto the cake; 
     
  • The cake is done!
