Raw Risotto With Poppy And Pomegranate Seeds

  • 1-2 heads of cauliflower 
  • 50 g/ 1.8 oz freshly ground poppy seeds 
  • 1 pomegranate 
  • ½ lemon 


  • A freezer
  • A knife and cutting board
  • A citrus presser


  • Place the cauliflower into the freezer and let it freeze; 
  • Take the cauliflower out of the freezer and let it defrost; 
  • Squeeze the defrosted cauliflower to remove the water from it; 
  • Remove the cauliflower florets from the stem;  
  • Place the cauliflower florets into the food processor; 
  • Pulse the cauliflower into the rice like consistency; 
  • Remove the pomegranate seeds from the fruit peel;

  • Juice ½ of a lemon; 
  • Add the lemon juice, pomegranate seeds and ground poppy seeds to the cauliflower rice; 
  • Mix it all well; 
  • Leave the risotto aside, to have the tastes mix before serving;
