What I Ate For Our New Year Family Lunch

In today’s blog post and video I want to share with you what I ate on a New Year family gathering for my lunch. If you have been following me for a while, then you know I have been on a vegan diet since 2005 and on a low fat raw vegan diet since 2012. So, my diet consists of fruits, vegetables and small amounts of nuts and seeds.

I like to eat seasonally. Thus for example, in the persimmon season, I have a monomeal of persimmons as the first of my two meals in a day, which comes in the lunch time. Sometime, I eat persimmons as they are - fantastic,

and sometimes I make one of my all time favorite recipes. I made this very recipe for the New Year family gathering.

As you can see in the picture below, there is a lot of different foods on our dining table, that other family members eat. But for me, there is my pudding and a couple of persimmons.

 

Perhaps it is strange for some of you that someone eats pudding for lunch.

But let me tell you that it is a very satisfying lunch. I remember when I was little, I would always look forward to somehow go through the main course of the lunch so that I could be rewarded with a desert.  

And the diet I am on today and which I suggest, means that I get the desert as the main course.  

But please note a crucial difference between the dessert on the standard diet and my main course. The standard dessert is very unhealthy and my main course is very healthy.  

Perhaps some of you wonder how can someone get full with pudding.  

On a standard diet, puddings and similar desserts are usually served in limiting and unsatisfying quantities.   

However, when your meal is fruit, or at least a fruit pudding, then you just make enough to satisfy your caloric needs. So for example, in the given situation I had about 1.5kg/ 3 lbs. of persimmons, which is 1.050 cal. My caloric needs are about 2 .000 calories a day, I eat twice a day and get in about 1.000 cal per meal. So, I have my caloric and nutritive needs met.
