Spring muffins

Ingredients for five maffins

For the base: 

  • 150 g / 5.3 oz fresh dates
  • 50 g / 1.8 oz raw carob powder

For the filling: 

  • 200 g / 7 oz bananas (measured without the skins)
  • 100 g / 3.5 oz of dried apples 
  • 50 g / 1.8 oz strawberries 

For the decoration:  

  • 1 sweet apple 


  • A food processor;
  • Silicone cake moulds;
  • A blender;
  • A knife and a cutting board;
  • A peeler;
  • A fruit cutter (butterfly shaped, or what ever shape you want smiley)

  • Remove the pits from the dates; 
  • Place the dates and carob into the food processor; 
  • Pulse these ingredients into a paste; 
  • Taking some paste at the time, molde it into a maffin base, pressing it inside a maffin mold;

  • Place the maffin molds into the freezer to have the crust thigthen;

Now, the filling.

  • Peel the bananas; 
  • Place the bananas, dried apple and strawberries into the blender; 
  • Blend these ingredients into the filling; 
  • Take the molds out from the freezer and fill them up with the filling;

Now we have the flowers, so we need some butterflies!

  • Peel the apple; 
  • Slice the apple;
  • With a butterfly cake cutter, make butterfly shape out of the apple slices; 
  • Let each butterfly to fly onto one flower and then return them into the freezer, to have the maffins tighten;  
  • And we need some leaves for our flowers. For this we gonna employ some spinach leaves;
  • Tanana! Spring maffins are ready!
