Raw Vegan Sandwiches - Low Fat

Ingredients:
- zucchinis - quantities are optional
- 500g/ 18oz tomatoes
- 20g/ 0.7oz dried tomatoes
- 1 medium size salad cucumber
- 1/2 lemon luice
- 30g/ 1oz sunflower seeds
- 1/3 tsp od dried celery
- 2 small size sweet bell peppers
- 1/3 tsp of dried sweet pepper
- 1/3 tsp of oregano
- 1 Penny Bun mushroom

Equipment:
- a knife and cutting board
- a peeler
- a dehydrator
- a citrus squizer
- a blender
- a decorating pipe

Preparation:
- Peel the zucchinis;
- Cut the zucchinis in halves;
- Remove the middles form the zucchinis, so to get zucchinis boats;
- Place the zucchini boats on the dehydrator trays;
- Dehydrate these zucchini boats at 48C/ 118 F degrees for about 4 hours;
- Place the zucchini middles, sunflower seeds, lemon juice and dried celery into the blender;
- Blend these ingredients into a white sauce;
- Place the sauce into a bowl;
- Place the fresh tomatoes, dried tomatoes, 1 fresh bell pepper, dried sweet pepper and oregano into the blender;
- Blend these ingredients into a “ketchup”;
- Place the ketchup into a decorating pipe;
- Remove the mushroom stem from the its cap;
- Thinly slice the mushroom cap;
- Peel the mushroom stem and then thinly slice it;
- Slice the tomatoes, cucumber and bell pepper;
- Spread some white sauce onto the partially dehydrated zucchini boats and then add the sliced veggies and cover them with some ketchup ot top;
- You can leave your sandwiches open, or cover them with partially dehydrated zucchini slices;
- Sandwiches are ready!
- A little tip: wrap the sandwich into a food paper so to easily hold all the ingredients in place;
