Raw & Soft Carrot Cupcakes

  • 400g/ 14oz dates
  • 800g/ 28oz carrots
  • 1 orange
  • 1/3 tsp cinnamon
  • 250g/ 9oz apple
  • 50g/ 1.7oz dried apples

Order fresh dates:

Order sulfur free dried apples:


  • A knife and cutting board
  • A peeler
  • A freezer
  • A food processor
  • A citrus press
  • A blender
  • Cupcake holders

Order a food processor:

Order a Vitamix:


  • Peel the carrots;
  • Place the carrots in the freezer and let them freeze;
  • Take the carrots out from the freezer and let the defrost;
  • This method will soften the carrots;
  • Chop up the defrosted carrots;
  • Place the chopped carrots into the food processor;
  • Process the carrots; 
  • Depit the dates;
  • Add the dates to the food processor;
  • Cut the orange in half;
  • Juice the orange;
  • Add the orange juice and the oragne pulp into the food processor, be careful to 
  • avoid the seeds, 
  • Add the cinnamon into the food processor as well;
  • Process these ingredients together into a cake mixture;
  • Place the mixture into a bowl;
  • Mould the mixture into balls and place them onto cupcake holders;
  • Peel the apple and remove the seeds and the petel;
  • Chop up the apple;
  • Place the dried apples into the blender and blend them into "flour";
  • Add the choped apple into the blender;
  • Blend these two ingredients into the frosting;
  • Place the frosting into the cake pipe;
  • Add the frosting onto the cupcakes;
