Fruit Cake - No Cooking - No Overt Fats

Ingredients: 

Ingredients for the crust: 

  • 500g / 18 oz dates
  • 200 g / 7oz carob powder

Order raw carob powder:

Ingredients for the first layer: 

  • 500g / 18 oz bananas
  • 500g / 18 oz dates

Ingredients for the second layer: 

  • 500g / 18 oz raspberries
  • 50g/ 1.7oz dried apples

Order sulfur free dried apples:

Ingredients for the third layer: 

  • 500g / 18 oz sweet cherries

Equipment: 

  • cake mold
  • parchment paper
  • a pair of scissor
  • a pair of disposable gloves
  • a bowl
  • blender
  • a knife and cutting board

Preparation: 

  • Place a piece of parchment paper on the bottom of the cake mold;
     
  • Depit the dates;
     
  • Place the dates for the crust and carob powder into a bowl;
  • Put on disposable gloves and make date-carob paste;
  • Place the paste into the cake mold;
  • Spread the paste over the surface of the cake mold creating the cake crust;
  • Place the mold into the freezer while you are making the filling for the first cake layer;
     
  • Place the dates for the first layer and bananas into the blender;
  • Blend these two ingredients into a filling;
  • Place the filling into the cake mold and spread it evenly over the cake crust; 
  • Place the cake mold into the freezer while you are making the filling for the second cake layer;
     
  • Place the dried apples into the blender and blend them into dried apple flour;
  • Add the raspberries to the blender and blend the dried apple flour and raspberries into a filling;
  • Place the filling into the cake mold and spread it evenly over the first layer;
  • Place the cake mold into the freezer while you are preparing the third cake layer;
     
  • Cut the sweet cherries into halves and remove the pits;
  • Place the sweet cherry halves over the cake;

  • Place the cake mold into the freezer and leave it there until the cake tightens up;
  • Your fruit cake is done and is waiting to be enjoyed!
